Start at a hawker centre
Maxwell Food Centre and Chinatown Complex are the classic starting points — chicken rice, laksa, char kway teow, all for a few dollars a plate. Hill Street Tai Hwa Pork Noodle and Liao Fan Hawker Chan have both held Michelin recognition while still charging hawker prices.
Mid-range and worth planning around
Peranakan restaurants around Katong serve some of the best regional cooking on the island — book ahead for anywhere with a good reputation, tables turn over fast.
The special-occasion tier
Singapore has one of the densest concentrations of fine dining in Asia. Restaurants pushing modern Singaporean and pan-Asian tasting menus book out weeks in advance — if there’s a specific place on your list, reserve before you land.
Practical tips
Hawker centres are cash-friendly but increasingly take PayNow/card too. Tipping isn’t expected. Air-conditioned hawker centres (versus open-air) are worth seeking out in the heat of the day.
